
Little Barn Calico Bean Soup in a Jar
To Prepare
Jar of Soup Mix
12 cups of water
2 carrots chopped
2 stalks celery chopped
2 pounds smoked ham hocks or 3-4 cubed cooked ham
Bring bean soup mix and water to a rolling boil in a large pot. Cover and remove from heat. Let sit 1 hour. Return pot to heat, stir in carrots and celery. Stir in ham hocks. (If using cooked ham, stir in after vegetables are soft) Cover and reduce heat and simmer 2 hours using ham hocks and 1 hour if using cooked ham. Remove hocks from soup and remove meat from bones, chop and return to soup. Add salt and pepper to taste. Heat thoroughly and serve. Yield: 4 quarts, 16 servings.
